Lunchbox Envy™

We have started writing our second book, Lunchbox Envy!

The USA is experiencing a childhood obesity epidemic, directly related to poor nutrition. Statistics show that 1 in 3 children born today will have diabetes by the time they are 21, with health costs reaching possibly $400,000 per person. 

Lunchbox Envy is planned to address multiple audiences, including children 4th grade and up, parents, families, teachers, and health providers of school-aged children. It will empower children and families to create enviable lunches: tasty, healthy, and easy-to-prepare. 
 

Lunchbox Envy will be an easy-to-read, transformational book to motivate families to have fun developing healthy eating habits. It is planned to provide inspiration for busy families who lack time or experience to make healthy lunches for their kids.

Lunchbox Envy will include:

• Over 100 delicious, healthy recipes, at varying levels of complexity, for kids to pack in their lunchboxes

• Time and money saving tips for parents

• Do-it-yourself projects including solar ovens, dehydrators, worm bins, waste-free lunchboxes, and more

• Ways for kids to actively participate in the family's food, including gardening, cooking, preserving, and guided shopping
  

•  Useful nutrition facts for families about how to make healthy food choices

• An engaging and interactive format, including original graphics created by children and young adults
  

Profits from our book sales are used to support the bioregion’s farmers, food production system, nutrition education, and to increase access to local food for all in the community through our grant program.
 

Like our first book, Locally Delicious™, Lunchbox Envy will depend on community involvement for its quality and success. We are asking for contributions of recipes and ideas.
